Everything's coming up roses...



I went to the grocery store on Saturday, but the only fruit I got was clementines...  I had meant to get some kiwi or berries, but completely forgot :o  Oh well, so clementines will be making many appearances this week - that's ok :)

I didn't want to do the kamaboko for another bento in a row, so I settled on tomato roses :)
I had thought I would do a Simpsons bento again for the 20th avviversary, but alas, discovered I only had fat free cheese slices - ewww! Rob would never go for that! lol

First I had to make some Macaroni Salad - I bought some shredded red cabbage and shredded carrots to help boost the nutrition, along with the usual celery, red onion and bell pepper - both red and green.  I didn't measure any of the veggies, but the recipe I used follows:

Macaroni Salad

8 oz. macaroni, prepared according to package
1c. Light Miracle Whip
1/2 c Kewpie Mayo
1 Tbs prepared mustard
2 Tbs. red wine vinegar
salt and pepper
1 celery stalk, diced
diced red and green bell pepper (maybe 1/4 c)
shredded carrot
shredded purple cabbage
diced red onion


I also packed him a salad - he's told me it's a little difficult to toss the salad together with the dressing in the bento boxes, so for today's I put it in a separate box and packed it more loosely - not sure I'll stick to that; really not happy with the way it looks...

Bottom Tier: Homemade Macaroni Salad w/ grape tomato flowers w/ wakame stems, pea pod leaves and black sesame seed ground

Top Tier: Peapods, red pepper and green pepper strips, curry pumpkin seeds and clementine segments

Apple and kiwi gummies in the lid

Single Tier: Salad w/ pumpkin egg and ham, buffalo chicken and provolone pinwheels
